Thank you to our plant friends who brought us perennials to sell at the Spring Plant Sale. Thank you to our workers who helped on Thursday,  Friday and also the day of the sale.

We were pleased with the plant sale held last weekend. Considering the cold and rainy weather pattern that we were in for so many days, people brought in some very nice plants to sell. Our net profit was $647.00 which goes toward the construction costs in the lower level.

Mark your calendar for the 2014-Spring Plant Sale, the first Saturday in May! Happy Spring!

 

St. Pat's Dinner & Plants Event
We had a wonderful day on Sunday! So many people came for the famous corned beef & cabbage meal that our ladies put on. It is one-of-a-kind meal. Thank you Stacy Campbell for chairing the kitchen food & crew. The kitchen crew did a fantastic job right up to the end cleaning up!!! Thank you to all the other workers who gave of their time on Sunday for this event.

Super Bowl Thank You

Thank you to everyone who came and had fun at our Super Bowl Pregame Party. The cooks & the workers did a fantastic job. The chicken noodle soup and chili were delicious; thank you Travis Halverson and Cindy Drury. Thank you Vicki Mueller for browning the brats. Thank you to the people who donated sweet rolls, hamburger, tomato products, onions, beans, ice cream, and brownies. Thank you to the people who donated items to the auction. YOU made the day a success! We were pleased to have the five Odyssey of the Mind Teams that participated at world as our honorary guests for this event.

2012 Winner of the Best Pumpkin or Apple Dessert

Pumpkin Paradise Pie submitted by Eileen McCarthy
Ingredients: 1 single pie crust

Cream cheese filling:
1-8 oz. cream cheese - softened
14 c sugar, 1 egg, 1/4 c mini chocolate chips

Pumpkin filling:
1-15 oz. pumpkin
3/4 c sugar
3 t pumpkin pie spice
2 eggs
1/2 c evaporated milk

Topping:
1 c chopped pecans
1/2 c mini semi sweet chocolate chips
1/2 c brown sugar
2 T pure maple syrup
Place pastry in pie pan and flute edge. Sprinkle with 1/4 c finely chopped pecans. Beat cream cheese ingredients until smooth. Spread over nuts.

Beat pumpkin ingredients with wire whisk until combined. Gently spoon over cream cheese filling. Cover edges to prevent excessive browning. Bake at 375 degrees for 55-65 min. Mix topping. Sprinkle topping over pie. Bake another 10 min. Cool for 1 hour. Cover and refrigerate 4 hours or overnight. Enjoy.

Layered Pumpkin Dessert

1-15 oz. package Twinkies (10 Twinkies)
1-8 oz. package cream cheese softened
1 c confectioner's sugar
1-8 oz. container Kool Whip
2 packages (3.4 oz. ea) Instant vanilla pudding
1-15 oz. can pumpkin
1 1/2 t pumpkin pie spice
1 c milk
Additional pumpkin pie spice.

Directions:
1. Slice Twinkies in half lengthwise and place cream side up, single layer, in 9x13" pan.
2. Blend together cream cheese, confectioner's sugar and 1/2 Kool whip until smooth. Spread over Twinkies.
3. Combine puddings, pumpkin, pumpkin pie spice, and milk. Whisk until blended. Layer over cream cheese mixture.
4. Carefully spread remaining Kool whip over pumpkin.
5. Lightly sprinkle with pumpkin pie spice.
6. Refrigerate several hours or until set.

Makes 9-12 servings.
